Fair warning, these brownies are addictive. You won’t be able to stop after just one!
WHAT YOU WILL NEED
Brownie Batter. Use your favorite brownie batter recipe to start or you can use a box mix like I did. I noticed Dolly Parton came out with her own and I couldn’t resist. Unlike most box mixes it calls for butter instead of oil and it came with a fudge packet that you squeeze into the batter, yum.
Chopped Pecans. Feel free to substitute walnuts if you prefer.
Mini Marshmallows. They will end up a beautiful golden brown like they were perfectly roasted over a campfire.
Chocolate Chips. Pick your favorite! I ended up using a bittersweet 60% cocoa for this because it’s what I had on hand and it was delightful. I’ve also used milk chocolate and a peanut butter mix in the past.
METHOD
STEP 1: Line a 9” x 9” baking dish with parchment paper.
STEP 2: Make the brownie batter according to your recipe or the box instructions.
STEP 3: Mix in about 1/3 of the pecans, 1/3 of the marshmallows, and 1/3 of the chocolate chips into the batter.
STEP 4: Pour the batter into the dish and level it out. Top with the remaining pecans, marshmallows, and chocolate chips.
STEP 5: Bake according to box instructions! You may have to add a little to the overall baking time, be sure to test the middle with a toothpick to see if it’s cooked.
Rocky Road Brownies
Ingredients
- 1 batch brownie batter of choice favorite boxed mix or from scratch
- 1 cup pecans chopped
- 1 cup mini marshmallows
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 degrees. Line a 9" x 9" baking dish with parchment paper.
- Mix up the brownie batter according to your recipe or the box insutructions.
- Mix in about 1/3 of the pecans, 1/3 of the marshmallows, and 1/3 of the chocolate chips into the batter.
- Pour the batter into the baking dish and level it out. Top with the remaining pecans, marshmallows, and chocolate chips.
- Bake according to the box instructions. You may need to add 5-10min to the overall bake time listed in your recipe. Be sure to test the middle of the pan with a toothpick to see if it's cooked through.
